Yummy!

I love that the girls are at the stage where they can eat a lot of what we're eating- it sure makes life easier. ;)  I've found that's my motto lately- call it lazy, smart, or just worn out, but easy makes me happy!   A big hit with the girls (and hubby and I too) was a delicious Southern Living recipe I made this week- can't go wrong with SL!  

Chicken -n- Spinach Pasta Bake

Ingredients

  • 8  ounces  uncooked rigatoni
  • 1  tablespoon  olive oil
  • 1  cup  finely chopped onion (about 1 medium)
  • 1  (10-oz.) package frozen chopped spinach, thawed
  • 3  cups  cubed cooked chicken breasts
  • 1  (14.5-oz.) can Italian-style diced tomatoes
  • 1  (8-oz.) container chive-and-onion cream cheese
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  pepper
  • 1 1/2  cups  (6 oz.) shredded mozzarella cheese

Preparation

1. Prepare rigatoni according to package directions.

2. Meanwhile, spread oil on bottom of an 11- x 7-inch baking dish; add onion in a single layer.

3. Bake at 375° for 15 minutes or just until tender. Transfer onion to a large bowl, and set aside.

4. Drain chopped spinach well, pressing between layers of paper towels.

5. Stir rigatoni, spinach, chicken, and next 4 ingredients into onion in bowl. Spoon mixture into baking dish, and sprinkle evenly with shredded mozzarella cheese.

6. Bake, covered, at 375° for 30 minutes; uncover and bake 15 more minutes or until bubbly.


I don't have a picture to entice, so you'll have to take my word for it- it's DELISH! :)  Reese and Riley scarfed it down- they're so big!  What I do have is a couple videos from dinner time yesterday-  Riley's latest 'silly' is picking up food in both hands, making fists and squeezing it until it's squished and licking it off her hands (you can see a quick second of it at the beginning of the video)!???  No idea... she's hilarious!  She also shows me that she's "So big!"- I try to get her to stretch her arms straight up real high-- she has her own version- a little zombie like. ha!  

 

Reese just wore herself out eating- she kept rubbing her eyes with spinach all over her hands.  Such a mess! :)

That sounds so good! I copied it and put it on my recipe "to-do" list. One good thing about my husband being layed off.....I have someone to watch the kids while I try out new recipes! :-)

I agree with Jill, these are too cute! Loved how Riley is trying to do so big! I can't believe they are going to be one soon!!
