Domestic Housewife??

During the summer when I'm not teaching, I clean and cook more that ever.  I actually enjoy it.  During the school year, I don't even notice the dishes piled in the sink to be honest.  I guess it's the job of teaching... it never ends, it comes home with you, and my creative crazy mind is always trying to solve problems of boring lessons, behavior problems, or how to respond to a parent's rude email even as I am laying in bed trying to fall asleep.  It's still surreal that I have resigned, BUT I am excited-- and relaxed!  Although, my cooking and cleaning will soon not be as it is-- with these girls on the way, I thought I'd share with you my favorite summertime lunch!  Then... YOU share with ME yours (or dinner)!  You can help me be the domestic housewife I've never been- ha! :)

 Turkey Wraps
 Wraps (my fav is sun dried tomato and basil)
 Turkey
 Cheese
 Avocado
           Sprouts
             Ranch
Pasta Salad
 Rigatoni pasta (colorful spirals)
1 Ranch packet
1 cup light mayo
1 cup milk
Black olives
Tomatoes chopped
Walnuts chopped
Cook pasta, mix ranch ingredients, stir with pasta.  Top with olives, tomatoes, and walnuts.

                
                                                      Strawberries and Whipped Cream
                                              1 cup heavy whipping cream
1 tablespoon confectioner's sugar
1 teaspoon run extract
Strawberries!

Amy, I will have to try out your recipes. They look yummy! I added my favorite summer recipes to my blog. Thanks for the great blog idea! I get stuck cooking the same thing and love quick, simple recipes to change things up a bit. Hope you and the twins are enjoying the summer!

A few of my favorite summer recipes:

Margarita chicken (safe for pregnant housewives)

marinate chicken breasts in margarita mix, garlic, a little lime juice and salt for 3-4 hours then grill.

Goes great with grilled veggies.

Fruit Pizza

use premade or homemade sugar cookie dough -
Spread dough onto a pizza pan and bake for 10 minutes.

Mix 8 oz. cream cheese and 8 oz. coolwhip. Spread on baked dough.

Top with sliced fruit of your choice, chill and serve.

yummy pasta,
my favorite lunch that I eat almost everyday especially this time of year when the berries are ripe for the picking is
spinach strawberry salad

baby spinach
sliced strawberries
feta or gorgonzola cheese
walnuts
raspberry walnut vinagrette dressing

the spinach is also a great source of folic acid for the pregnant mommy!

don't eat sprouts when you are pregnant. they have a bacteria that is very dangerous.

Shiloh.... I think I am going to make that chicken tonight. Mmmm..

I have a recipe for a tortilla salad that it would go great with.
The dressing is honey, cider vinegar, and curry (sounds gross, but oh so good). The salad has corn, black beans, and crispy tortilla strips. Top with a little cheese. Yum!
