Some Fun Fall Cookin!


Mom and Dad were here for a week to help with the girls- it was GREAT!!  I miss them already!  While they were here, I was able to "feed" my urge to bake/cook!  In the fall-- I crave all things pumpkin!  Here are some recipes we made last week:
BEAN SOUP
A package of dry beans- it says "Bean Soup!"
turkey sausage (or turkey bacon)
one onion
chicken broth
a bit of salsa
garlic
salt and pepper
Cook in crock pot on high all day- DELISH and easy!  Serve with cornbread- yum!

TACO SOUP (forgot a picture!)
This is my FAV recipe and SUPER easy.  Lots of people have a variation, but this one is from my sweet friend's grandma.
Ground Turkey (or shredded chicken)
1 can black beans
1 can kidney beans
1 can stewed tomatoes
1 can rotel
1 can corn
1 onion
1 package Taco Seasoning
1 package Ranch Seasoning
Cook on stovetop or crock pot and serve with chips or corn bread.  Awesome on a cold day!!


Pumpkin Pancakes (allrecipes.com)
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • They're SOO good with peanut butter or syrup and don't forget coffee!
Pumpkin Cookies! (allrecipes.com)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  •  
  • 2 cups confectioners' sugar
  • 3 tablespoons milk
  • 1 tablespoon melted butter
These are AMAZING.  They have a cake like texture-- I could eat them all!

Brownie Peanut Butter Cup Bites
Prepare Brownies as directed on Brownie Mix
Poor in mini muffin liners in mini muffin pan
When out of the oven, press a Reese's Peanut Butter Cup in the middle.
They're addicting...

Oh man, you are making me so hungry! I LOVE to bake as well! Pumpkin cookies, pumpkin muffins, pumpkin pancakes...you name it, I LOVE it! I can't wait to see your pics of the girls with their grandparents! How fun! :)

The pumpkin pancakes and brownie bites look so good!! Going to have to try both of those. Thank you for the recipes...I love trying new things.
